Ingredients:

  • 1 lb (450g) ground beef (preferably 80/20 for flavor)
  • 1/2 lb (225g) bacon, chopped
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1/2 cup (60g) breadcrumbs
  • 1/4 cup (60ml) milk
  • 1 large egg
  • 1/4 cup (60g) ketchup, plus more for topping
  • 2 tablespoons yellow mustard
  • 1/2 teaspoon Worcestershire sauce
  • 1 cup (100g) shredded cheddar cheese (divided)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika (optional)
  • Fresh parsley, chopped, for garnish (optional)

Instructions:

  1. Cook the bacon and veggies: In a large skillet, cook the chopped bacon over medium heat until crispy, about 5-7 minutes. Remove the bacon with a slotted spoon and set it aside. In the bacon fat left in the skillet, sauté the diced onion and minced garlic until softened, about 3-4 minutes. Remove from heat and let cool slightly.
  2. Prepare the meatloaf mixture: In a large bowl, combine the ground beef, cooked bacon, sautéed onions and garlic, breadcrumbs, milk, egg, ketchup, mustard, Worcestershire sauce, salt, pepper, and smoked paprika (if using).
