Bacon & Broccoli Pasta

This Bacon & Broccoli Pasta is a perfect balance of indulgent and nutritious flavors, combining crispy bacon with vibrant, fresh broccoli. Ingredients:

  • 12 oz pasta (penne, fusilli, or your favorite)
  • 6 slices of bacon, chopped
  • 3 cups broccoli florets
  • 3 cloves garlic, minced
  • 1/4 cup olive oil
  • 1/2 cup grated parmesan cheese
  • 1/4 tsp red pepper flakes (optional)
  • Salt and pepper to taste

Instructions:

  1. Cook the pasta: In a large pot of salted boiling water, cook the pasta according to package directions. Reserve 1/2 cup of pasta water and drain the rest.
  2. Prepare the bacon: While the pasta is cooking, heat a large skillet over medium heat. Add the chopped bacon and cook until crispy, about 6-8 minutes. Remove the bacon with a slotted spoon and set it aside on a paper towel-lined plate to drain. Leave about 1-2 tablespoons of bacon fat in the skillet.
  3. Cook the broccoli: In the same skillet with the bacon fat, add the broccoli florets and sauté for 4-5 minutes, until they are tender but still bright green. Add the minced garlic and cook for another 1-2 minutes, until fragrant.
  4. Combine: Add the cooked pasta to the skillet with the broccoli. Pour in the reserved pasta water and olive oil, stirring to combine. Return the crispy bacon to the skillet and toss everything together.
  5. Season and serve: Stir in the grated parmesan cheese, red pepper flakes (if using), and season with salt and pepper to taste. Serve warm, garnished with extra parmesan if desired.
