Apricot Coconut Balls

Ingredients:

  • 1 cup dried apricots, chopped
  • 1 cup unsweetened shredded coconut, plus extra for rolling
  • 1/2 cup raw almonds (or cashews), roughly chopped

  • 1 tsp vanilla extract
  • 1/4 tsp ground cinnamon
  • Pinch of salt

Instructions:

  1. Prepare the Apricots and Nuts: Place the chopped dried apricots in a food processor and pulse until they are finely chopped but still slightly chunky. Add the chopped almonds (or cashews), shredded coconut, cinnamon, and salt to the food processor. Pulse a few more times to combine everything.
  2. Form the Mixture: Add the honey (or maple syrup) and vanilla extract to the food processor. Pulse until the mixture begins to come together into a sticky, cohesive dough. If the mixture seems too dry, add a little more honey or a splash of water until it holds together.
  3. Shape the Balls: Using your hands, take about a tablespoon of the mixture at a time and roll it into a ball. Roll each ball in additional shredded coconut to coat it, pressing gently to ensure the coconut sticks.
  4. Chill and Serve: Place the coconut-coated balls on a baking sheet lined with parchment paper or a silicone mat. Refrigerate for at least 30 minutes to allow them to firm up. They will keep in an airtight container in the refrigerator for up to a week.
