Apricot Clafoutis

Apricot Clafoutis is a delightful French dessert that elegantly balances the tartness of apricots with a sweet, custard-like batter. Originating from the Limousin region of France, clafoutis traditionally features cherries, but the use of apricots offers a refreshing twist and brings a vibrant, sunny flavor to this classic dish. The apricots are arranged in a buttered dish and covered with a smooth, thick batter, then baked until just set with a golden crust on top. Sprinkled with a dusting of powdered sugar and served warm, Apricot Clafoutis makes for a perfect end to any meal, especially during the summer when apricots are at their peak.

Ingredients:

  • 1 tablespoon unsalted butter, for greasing
  • 4-5 fresh apricots, pitted and cut into slices
  • 3/4 cup granulated sugar, plus extra for sprinkling
  • 4 large eggs
  • 1 cup whole milk
  • 1 teaspoon vanilla extract
  • 3/4 cup all-purpose flour
  • 1/4 teaspoon salt
  • Powdered sugar, for dusting

Directions:

  1. Preheat the Oven and Prepare the Dish:
    • Preheat your oven to 375°F (190°C). Grease a medium-sized baking dish with butter. Sprinkle a little granulated sugar over the buttered surface.
  2. Arrange the Apricots:
    • Arrange the apricot slices in a single layer at the bottom of the greased dish.
  3. Mix the Batter:
    • In a mixing bowl, whisk together the eggs and 3/4 cup of sugar until well combined and slightly frothy. Stir in the milk and vanilla extract.
    • Sift in the flour and salt, and whisk until the batter is smooth and free of lumps.
  4. Bake the Clafoutis:
    • Pour the batter over the apricots in the dish, ensuring the fruit is evenly covered.
    • Place in the oven and bake for 35-45 minutes, or until the clafoutis is set and golden brown on top.
  5. Serve:
    • Remove the clafoutis from the oven and let it cool slightly. Dust with powdered sugar before serving. It can be enjoyed warm or at room temperature.

Apricot Clafoutis not only offers a burst of summer flavor but also provides a visually appealing dessert that’s easy to make and sure to impress. Its custardy texture and fruity sweetness make it a standout dish suitable for any occasion, from a casual family dinner to a more formal gathering.
