Apple Compote

Ingredients:

  • 4 medium apples (Granny Smith, Honeycrisp, or a mix)
  • 1/4 cup sugar (or to taste)
  • 1/4 cup water
  • 1 tbsp lemon juice
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp vanilla extract
  • Pinch of salt

Instructions:

  1. Peel, core, and chop the apples into small bite-sized pieces.
  2. In a medium saucepan, combine the apples, sugar, water, lemon juice, cinnamon, nutmeg, and a pinch of salt.
  3. Bring to a simmer over medium heat, stirring occasionally. Cook for 10-15 minutes, or until the apples have softened and the mixture has thickened.
  4. Stir in the vanilla extract and cook for an additional 2 minutes.
