Apple Cider Caramels Recipe

Ingredients:

  • 2 cups apple cider

  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, cut into cubes
  • 1/3 cup light corn syrup

Instructions:

  1. Reduce the Apple Cider: In a medium saucepan, bring the apple cider to a boil over medium heat. Let it simmer, stirring occasionally, until it reduces to about 1/2 cup, roughly 30-40 minutes. Set aside to cool.
  2. Prepare the Caramel Base: In a separate large saucepan, combine the reduced apple cider, heavy cream, cinnamon, nutmeg, granulated sugar, brown sugar, butter, and corn syrup. Stir to mix well.
  3. Cook the Caramel: Attach a candy thermometer to the side of the saucepan. Cook the mixture over medium heat, stirring occasionally, until it reaches 248°F (120°C), which is the firm-ball stage. This will take around 10-15 minutes.
  4. Add Vanilla: Once the caramel reaches the desired temperature, remove it from heat and stir in the vanilla extract.
  5. Pour and Cool: Pour the caramel mixture into a parchment-lined 8×8-inch baking pan, spreading it evenly. Allow the caramel to cool at room temperature for about 2-3 hours or until fully set.
  6. Cut and Serve: Once set, lift the caramel slab out of the pan using the parchment paper. Cut the caramel into small squares or rectangles and sprinkle with flaky sea salt if desired.
  7. Wrap: Wrap the caramels in wax paper or store them in an airtight container.
