Ingredients

For the glaze (optional):

  • 1 cup powdered sugar
  • 2-3 tbsp apple cider

Instructions

  1. Reduce the apple cider: In a small saucepan, simmer the apple cider over medium heat until it reduces to about 1/2 cup, approximately 10-15 minutes. Set aside to cool.
  2. Preheat the oven: Preheat your oven to 350°F (175°C) and grease a bundt pan or 9×13-inch baking pan.
  3. Mix the dry ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
  4. Cream the butter and sugar: In a large bowl, beat the softened butter, granulated sugar, and brown sugar together until light and fluffy, about 3-4 minutes. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract and cooled, reduced apple cider.
  5. Combine the wet and dry ingredients: Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk. Mix until just combined.
  6. Bake the cake: Pour the batter into the prepared pan and smooth the top. Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
