Perfect for tea time, picnics, or simply as an afternoon snack, Anzac Slice is a quick and simple recipe that doesn’t require any baking but still delivers on flavor and comfort. With just a handful of pantry staples, you can make this timeless treat in no time.

Ingredients:

  • 1 cup rolled oats
  • 1 cup desiccated coconut
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar, packed
  • 1/2 cup unsalted butter
  • 2 tbsp golden syrup (or light corn syrup)
  • 1/2 tsp baking soda
  • 2 tbsp boiling water

Optional for topping:

  • 1/4 cup dark chocolate chips or melted chocolate

Instructions:

  1. Prepare the baking dish: Line an 8×8-inch (20×20 cm) baking dish or a similar-sized pan with parchment paper or lightly grease it.
  2. Combine dry ingredients: In a large mixing bowl, stir together the rolled oats, desiccated coconut, flour, and brown sugar until evenly mixed.
  3. Melt the butter and golden syrup: In a small saucepan over low heat, combine the butter and golden syrup. Stir until the butter has melted and the mixture is smooth.
  4. Activate the baking soda: In a separate small bowl, dissolve the baking soda in the boiling water and then add it to the butter and golden syrup mixture. Stir until the mixture bubbles slightly.
  5. Combine wet and dry ingredients: Pour the wet mixture into the dry ingredients and stir until everything is well combined and the oats and coconut are evenly coated.
  6. Press into the pan: Transfer the mixture to the prepared baking dish and press it down firmly using the back of a spoon or your hands to create an even layer.
  7. Chill and set: Refrigerate the slice for at least 2 hours, or until it is firm and set.
  8. Optional chocolate topping: If you like, melt the dark chocolate chips in a microwave-safe bowl or over a double boiler. Drizzle the melted chocolate over the set slice and spread it evenly with a spatula. Let it cool until the chocolate is set.
  9. Slice and serve: Cut the chilled slice into squares or bars and serve. Store any leftovers in an airtight container in the refrigerator for up to a week.

Anzac Slice is a delightful, easy-to-make dessert that showcases the iconic combination of oats, coconut, and golden syrup in a no-bake format. It’s perfect for when you want something quick, nostalgic, and satisfying, whether you’re celebrating Anzac Day or just looking for a tasty treat to enjoy with your afternoon cup of tea.
