Almond Joy Brownies

Almond Joy Brownies take all the beloved flavors of the classic Almond Joy candy bar—coconut, almonds, and chocolate—and transform them into a decadent brownie that’s both rich and satisfying. This dessert layers a fudgy, chocolatey brownie base with a sweet coconut filling, and is topped with whole almonds and a smooth chocolate glaze. These brownies are perfect for a special treat, a potluck dessert, or any time you want to bring a bit of extra joy into your baking.

Ingredients:

  • For the Brownie Layer:
    • 1/2 cup unsalted butter
    • 1 cup granulated sugar
    • 2 large eggs
    • 1 teaspoon vanilla extract
    • 1/3 cup unsweetened cocoa powder
    • 1/2 cup all-purpose flour
    • 1/4 teaspoon salt
    • 1/4 teaspoon baking powder
  • For the Coconut Layer:
    • 1 cup sweetened shredded coconut
    • 1/3 cup sweetened condensed milk
    • 1/2 teaspoon vanilla extract
  • For the Topping:
    • 1/2 cup whole almonds
    • 1/2 cup semisweet chocolate chips
    • 1 tablespoon coconut oil or butter

Directions:

  1. Preheat Oven and Prepare Pan:
    • Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking pan or line it with parchment paper.
  2. Make the Brownie Base:
    • Melt the butter in a medium saucepan over low heat. Remove from heat and stir in sugar, eggs, and 1 teaspoon vanilla. Beat in cocoa, flour, salt, and baking powder. Spread the batter into the prepared pan.
  3. Prepare the Coconut Layer:
    • In a bowl, mix together the shredded coconut, condensed milk, and 1/2 teaspoon vanilla extract until well combined. Distribute this mixture evenly over the brownie layer.
  4. Bake:
    • Place the brownie pan in the oven and bake for about 25 minutes, or until the coconut layer is lightly golden.
  5. Add Almonds and Chocolate Topping:
    • While the brownies are baking, melt the chocolate chips and coconut oil in a small saucepan over low heat until smooth. Once the brownies are removed from the oven, immediately place whole almonds in rows on top of the coconut layer, then pour the melted chocolate over everything.
  6. Cool and Set:
    • Allow the brownies to cool completely in the pan on a wire rack. For the chocolate to set properly, you can also place them in the refrigerator for about 30 minutes.
  7. Serve:
    • Cut into squares and serve. Enjoy the delightful mix of chocolate, coconut, and almonds in every bite of these rich, candy bar-inspired brownies.

Almond Joy Brownies are a perfect treat for anyone who loves combining nuts and coconut with the rich taste of chocolate. Whether served at a party or enjoyed quietly with a cup of coffee, these brownies make for a truly joyful dessert experience.
