Ingredients:

  • 3 cups rolled oats
  • 1 cup sliced almonds
  • 1/4 cup chia seeds or flaxseeds (optional)
  • 1/2 cup almond butter
  • 1/3 cup maple syrup or honey
  • 1/4 cup coconut oil, melted
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 1/2 cup dried fruit (raisins, cranberries, or chopped apricots – optional)

Instructions:

  1. Preheat Oven: Preheat your oven to 325°F (165°C). Line a large baking sheet with parchment paper.
  2. Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, sliced almonds, chia seeds (if using), cinnamon, and salt. Stir until evenly distributed.
  3. Prepare Wet Mixture: In a microwave-safe bowl or saucepan, gently heat the almond butter, maple syrup, and coconut oil until melted and combined. Stir in the vanilla extract.
  4. Combine: Pour the wet mixture over the dry ingredients. Stir thoroughly to ensure all the oats are evenly coated.
  5. Bake: Spread the mixture evenly onto the prepared baking sheet. Bake for 20-25 minutes, stirring halfway through to ensure even browning. Keep a close eye on it in the last few minutes to prevent burning.
  6. Cool: Remove from the oven and allow the granola to cool completely on the baking sheet. It will crisp up as it cools.
  7. Add Dried Fruit (Optional): Once the granola has cooled, stir in the dried fruit if desired.
  8. Store: Transfer to an airtight container and store at room temperature for up to two weeks.

Enjoy this almond butter granola as a quick breakfast, an afternoon snack, or even a dessert topping! It’s sure to become a favorite in your pantry.
