Almond Butter Cups

Almond Butter Cups are a delicious and healthier alternative to traditional peanut butter cups, combining the creamy richness of almond butter with the sweetness of dark chocolate. These treats are perfect for a quick snack or dessert and can easily be customized by using different types of chocolate or adding mix-ins like sea salt or coconut flakes. Ingredients:

  • 1 cup almond butter (smooth or crunchy)
  • 2 tablespoons coconut oil
  • 1 tablespoon honey or maple syrup (optional, for sweetness)
  • 1 teaspoon vanilla extract
  • 1 ½ cups dark chocolate (chopped or use chips)
  • Sea salt (optional, for topping)

Instructions:

  1. Prepare the Filling: In a medium bowl, mix together almond butter, coconut oil, honey (if using), and vanilla extract until smooth. Set aside.
  2. Melt the Chocolate: Using a double boiler or microwave, melt the dark chocolate until smooth, stirring occasionally to prevent burning. If using a microwave, heat the chocolate in 30-second increments, stirring in between.
  3. Assemble the Cups:
    • Line a muffin tin with paper liners.
    • Pour about 1 tablespoon of melted chocolate into the bottom of each liner and spread it evenly.
    • Place the muffin tin in the freezer for about 10 minutes to allow the chocolate to set.
  4. Add the Almond Butter Layer: Once the chocolate has hardened, add a heaping teaspoon of the almond butter mixture on top of the chocolate layer, gently flattening it with a spoon.
  5. Top with Chocolate: Pour more melted chocolate over the almond butter layer, enough to cover it completely. If desired, sprinkle a pinch of sea salt on top.
  6. Chill to Set: Place the muffin tin back in the freezer for another 15-20 minutes or until the chocolate has completely hardened.
  7. Enjoy: Once set, remove the almond butter cups from the liners and enjoy! Store any leftovers in an airtight container in the refrigerator for up to a week.
