Ingredients:
- 1 tablespoon vegetable oil
- 1/2 pound ground pork or shrimp (optional)
- 2 cups coleslaw mix (shredded cabbage and carrots)
- 1/2 cup chopped mushrooms
- 2 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 tablespoon oyster sauce (optional)
- 1 teaspoon sesame oil
- 1/4 teaspoon ground black pepper
- 10-12 egg roll wrappers
- Cooking spray or additional vegetable oil for brushing
Instructions:
- Prepare the Filling:
- Heat the vegetable oil in a large skillet over medium heat. If using ground pork or shrimp, add it to the skillet and cook until browned and fully cooked. Remove from the skillet and set aside.
- In the same skillet, add the garlic and mushrooms, and sauté for about 2-3 minutes until the mushrooms are tender.
- Add the coleslaw mix to the skillet and cook for an additional 2-3 minutes until the cabbage starts to soften.
- Return the cooked pork or shrimp to the skillet (if using) and stir in the soy sauce, oyster sauce, sesame oil, and black pepper. Cook for another 2 minutes, then remove from heat and let the filling cool slightly.
- Assemble the Egg Rolls:
- Lay out an egg roll wrapper on a clean surface with one corner pointing toward you (like a diamond shape).
- Place 2-3 tablespoons of the filling mixture near the center of the wrapper.
- Fold the bottom corner up over the filling, then fold the sides in, and roll tightly toward the top corner. Moisten the top corner with a bit of water to seal the roll. Repeat with the remaining wrappers and filling.
- Air Fry the Egg Rolls:
- Preheat your air fryer to 375°F (190°C).
