Air Fryer Egg Rolls

Egg rolls are a beloved appetizer in many Asian cuisines, known for their crispy exterior and flavorful fillings. Making them at home can sometimes seem daunting, but with an air fryer, you can achieve that perfect golden-brown crunch without the need for deep frying. These Air Fryer Egg Rolls are filled with a savory mix of vegetables and optionally, ground pork or shrimp, wrapped in a thin egg roll wrapper and cooked to perfection. The result is a light, crispy, and delicious snack or appetizer that’s much healthier than the traditional deep-fried version.

Ingredients:

  • 1 tablespoon vegetable oil
  • 1/2 pound ground pork or shrimp (optional)
  • 2 cups coleslaw mix (shredded cabbage and carrots)
  • 1/2 cup chopped mushrooms
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 1 teaspoon sesame oil
  • 1/4 teaspoon ground black pepper
  • 10-12 egg roll wrappers
  • Cooking spray or additional vegetable oil for brushing

Instructions:

  1. Prepare the Filling:
    • Heat the vegetable oil in a large skillet over medium heat. If using ground pork or shrimp, add it to the skillet and cook until browned and fully cooked. Remove from the skillet and set aside.
    • In the same skillet, add the garlic and mushrooms, and sauté for about 2-3 minutes until the mushrooms are tender.
    • Add the coleslaw mix to the skillet and cook for an additional 2-3 minutes until the cabbage starts to soften.
    • Return the cooked pork or shrimp to the skillet (if using) and stir in the soy sauce, oyster sauce, sesame oil, and black pepper. Cook for another 2 minutes, then remove from heat and let the filling cool slightly.
  2. Assemble the Egg Rolls:
    • Lay out an egg roll wrapper on a clean surface with one corner pointing toward you (like a diamond shape).
    • Place 2-3 tablespoons of the filling mixture near the center of the wrapper.
    • Fold the bottom corner up over the filling, then fold the sides in, and roll tightly toward the top corner. Moisten the top corner with a bit of water to seal the roll. Repeat with the remaining wrappers and filling.
  3. Air Fry the Egg Rolls:
    • Preheat your air fryer to 375°F (190°C).
    • Lightly spray the egg rolls with cooking spray or brush with vegetable oil on all sides.
    • Arrange the egg rolls in a single layer in the air fryer basket, making sure they are not touching.
    • Air fry for 10-12 minutes, turning halfway through, until the egg rolls are golden brown and crispy.
  4. Serve:
    • Serve the egg rolls hot with your favorite dipping sauce, such as sweet chili sauce or soy sauce.
