Afghan Biscuits are a beloved traditional New Zealand treat, known for their rich, buttery flavor and deliciously crumbly texture. Made with simple ingredients like flour, butter, sugar, and cocoa powder, these biscuits are distinct for their addition of cornflakes, which give them a delightful crunch. Afghan biscuits are typically topped with a smooth layer of chocolate icing and a walnut half, creating a perfect balance of sweetness and texture. Enjoyed with a cup of tea or coffee, they are a delightful indulgence and a favorite in Kiwi homes.

Ingredients:

For the Biscuits:

  • 200g (7 oz) butter, softened
  • ½ cup sugar
  • 1 ¼ cups all-purpose flour
  • ¼ cup unsweetened cocoa powder
  • 2 cups cornflakes, lightly crushed

For the Icing:

  • 1 cup powdered sugar
  • 2 tbsp unsweetened cocoa powder
  • 2 tbsp boiling water
  • 1 tsp butter (optional, for a glossy finish)
  • Walnut halves, for topping

Instructions:

  1. Preheat the oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Make the dough: In a large bowl, cream the softened butter and sugar together until light and fluffy. Sift in the flour and cocoa powder, and mix until combined. Gently fold in the crushed cornflakes until evenly distributed.
  3. Shape the biscuits: Roll tablespoons of the dough into balls and place them on the prepared baking sheet. Gently flatten each ball with your fingers to form thick discs.
  4. Bake: Bake for 12-15 minutes, or until the biscuits are firm to the touch. Remove from the oven and allow them to cool completely on a wire rack.
  5. Make the icing: In a small bowl, whisk together the powdered sugar, cocoa powder, and boiling water until smooth. Add butter for extra shine if desired.
  6. Ice the biscuits: Once the biscuits have cooled, spread a generous amount of icing on top of each one and press a walnut half into the center.

Enjoy these delicious Afghan Biscuits as a crunchy, chocolaty treat perfect for any time of day!
