Stuffed Iowa Chops

Instructions:

  1. Prepare the Pork Chops:
    • Preheat your oven to 375°F (190°C).
    • Using a sharp knife, cut a pocket into the side of each pork chop. Be careful not to cut all the way through; the pocket should be deep enough to hold a generous amount of stuffing.
  2. Make the Stuffing:

    • Spoon the stuffing mixture into the pocket of each pork chop, packing it in tightly.
    • Use toothpicks to secure the opening of each chop, ensuring the stuffing stays in place during cooking.
  4. Sear the Chops:
    • Heat the olive oil in a large oven-safe skillet over medium-high heat.
    • Sear the stuffed pork chops on each side for about 3-4 minutes, or until they are golden brown.
  5. Bake the Chops:
    • Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the pork chops reach an internal temperature of 145°F (63°C) and are cooked through.
