Ingredients:

  • 1 sheet puff pastry, thawed
  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 8 oz mushrooms (such as cremini or button), finely chopped
  • 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
  • Salt and pepper to taste
  • 1/4 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1 egg, beaten (for egg wash)
  • Fresh parsley, chopped, for garnish

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Prepare the Pastry:
    • On a lightly floured surface, roll out the puff pastry sheet to smooth out any creases. Using a round cookie cutter (about 2-3 inches in diameter), cut out circles from the pastry. Place the pastry circles on the prepared baking sheet.
  3. Prepare the Mushroom Filling:
    • In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
    • Add the minced garlic and chopped mushrooms to the skillet. Cook until the mushrooms are tender and any liquid has evaporated, about 7-8 minutes.
    • Stir in the fresh thyme, salt, and pepper. Add the heavy cream and cook for another 2-3 minutes until the mixture is thickened. Remove from heat and stir in the grated Parmesan cheese.
  4. Assemble the Tartlets:
    • Place a small spoonful of the mushroom filling in the center of each pastry circle. Fold the edges of the pastry slightly over the filling to create a border.
    • Brush the edges of the pastry with the beaten egg to give them a golden finish.
  5. Bake the Tartlets:
    • Bake in the preheated oven for 12-15 minutes, or until the pastry is golden brown and puffed.
  6. Garnish and Serve:
    • Remove the tartlets from the oven and let them cool slightly. Garnish with chopped fresh parsley before serving.

Enjoy these Mushroom Tartlets as a delightful and sophisticated appetizer that will elevate any gathering with their rich flavor and elegant presentation.
