  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper (optional, for heat)

For the Pineapple Salsa:

  • 1 cup fresh pineapple, diced
  • 1/2 red onion, finely chopped
  • 1 red bell pepper, diced
  • 1 jalapeño, seeded and minced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions

  1. Prepare the Chicken Marinade:
    • In a large bowl, mix together olive oil, garlic powder, smoked paprika, ground cumin, salt, black pepper, and cayenne pepper.
    • Add the chicken drumsticks to the bowl and coat them thoroughly with the marinade. Let them marinate for at least 30 minutes, or refrigerate for up to 4 hours for more flavor.
  2. Grill the Drumsticks:
    • Preheat your grill to medium-high heat.
    • Place the marinated drumsticks on the grill and cook for about 20-25 minutes, turning occasionally, until they are cooked through and have a nice char on the outside. The internal temperature should reach 165°F (75°C).
  3. Make the Pineapple Salsa:
    • In a medium bowl, combine the diced pineapple, red onion, red bell pepper, jalapeño, and cilantro.
    • Add lime juice and season with salt and pepper to taste. Mix well and let the salsa sit for at least 10 minutes to allow the flavors to meld.
  4. Serve:
    • Remove the drumsticks from the grill and let them rest for a few minutes.
    • Serve the drumsticks hot, topped with a generous spoonful of pineapple salsa. Enjoy!

This dish pairs well with rice or a fresh salad for a complete meal. The pineapple salsa can also be served with tortilla chips as an appetizer.
