Ingredients:

  • 1 sleeve Ritz crackers
  • 1 bag Rolo candies, unwrapped
  • 1 cup chocolate chips or melting chocolate
  • Optional toppings: sea salt, crushed nuts, or sprinkles

Instructions:

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Place half of the Ritz crackers, flat side down, on the prepared baking sheet.
  3. Place one Rolo candy in the center of each cracker.
  4. Top each Rolo with another Ritz cracker, flat side down, to form a sandwich. Press gently to secure.
  5. Bake in the preheated oven for 3-5 minutes, just until the Rolos are soft but not completely melted.
  6. Remove the baking sheet from the oven and let the crackers cool slightly to allow the Rolos to set.
  7. While the crackers are cooling, melt the chocolate chips or melting chocolate in a microwave-safe bowl in 30-second intervals, stirring between each interval until smooth.
  8. Dip half of each cracker sandwich into the melted chocolate, allowing any excess to drip off.
  9. Place the dipped crackers back on the parchment-lined baking sheet. If desired, sprinkle with sea salt, crushed nuts, or sprinkles before the chocolate sets.
  10. Allow the chocolate to set completely at room temperature or place the crackers in the refrigerator for faster setting.

Serve these delicious Rolo Stuffed Ritz Crackers as a delightful treat for any occasion, and watch them disappear in no time!
