Banana Pudding

Banana pudding is a classic Southern dessert that brings together layers of sweet vanilla pudding, ripe bananas, and crisp vanilla wafers, all topped with a fluffy meringue or whipped cream. This comforting treat is perfect for gatherings, potlucks, or any occasion that calls for a delicious and easy-to-make dessert. The creamy pudding combined with the fresh banana slices and crunchy wafers creates a delightful blend of textures and flavors that will transport you back to childhood memories with every bite.

Ingredients

  • 1 cup granulated sugar
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 4 cups whole milk
  • 4 large egg yolks
  • 1 teaspoon vanilla extract
  • 1 tablespoon unsalted butter
  • 4 ripe bananas, sliced
  • 1 box vanilla wafers
  • Whipped cream or meringue for topping

Instructions

  1. Prepare the Pudding: In a medium saucepan, whisk together the sugar, flour, and salt. Gradually add the milk, whisking continuously until the mixture is smooth. Cook over medium heat, stirring constantly, until the mixture begins to thicken and comes to a gentle boil.
  2. Add the Egg Yolks: In a small bowl, lightly beat the egg yolks. Slowly add a small amount of the hot milk mixture to the yolks, whisking constantly to temper them. Then, add the tempered yolks back into the saucepan with the remaining milk mixture.
  3. Thicken the Pudding: Continue cooking over medium heat, stirring constantly, until the pudding is thick and creamy. Remove from heat and stir in the vanilla extract and butter until fully incorporated.
  4. Assemble the Pudding: In a large serving dish or individual cups, layer the vanilla wafers, banana slices, and pudding. Repeat the layers until all ingredients are used, ending with a layer of pudding on top.
  5. Top and Chill: Spread whipped cream or meringue over the top layer of pudding. If using meringue, you can brown it lightly under a broiler for a few minutes, watching carefully. Refrigerate the pudding for at least 2 hours before serving to allow the flavors to meld and the wafers to soften slightly.
  6. Serve: Serve chilled and enjoy your homemade banana pudding!
