Ingredients:

  • For the Dough:
    • 2 cups all-purpose flour
    • 1 tablespoon granulated sugar
    • 1/2 teaspoon salt
    • 1/2 cup unsalted butter, chilled and diced
    • 1/2 cup buttermilk
  • For the Filling:
    • 2 cups fresh or frozen fruit (such as apples, peaches, or berries), diced
    • 1/4 cup granulated sugar
    • 1 tablespoon lemon juice
    • 1 tablespoon cornstarch
    • 1/2 teaspoon cinnamon (optional)
  • For Frying:
    • Vegetable oil, for frying
    • Powdered sugar, for dusting (optional)

Instructions:

  1. Make the Dough:
    • In a large bowl, combine the flour, sugar, and salt. Cut in the chilled butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
    • Gradually add the buttermilk, mixing until the dough comes together. Knead the dough gently on a floured surface until smooth. Wrap in plastic wrap and refrigerate for at least 30 minutes.
  2. Prepare the Filling:
    • In a medium saucepan, combine the diced fruit, sugar, lemon juice, cornstarch, and cinnamon (if using). Cook over medium heat until the fruit is soft and the mixture has thickened, about 10 minutes. Remove from heat and let cool.
  3. Assemble the Pies:
    • Roll out the chilled dough on a floured surface to about 1/8-inch thickness. Cut out circles using a 4-5 inch cookie cutter or a glass.
    • Place a spoonful of the fruit filling in the center of each dough circle. Fold the dough over the filling to create a half-moon shape, and press the edges with a fork to seal.
  4. Fry the Pies:
    • Heat about 1 inch of vegetable oil in a large skillet over medium heat until it reaches 350°F (175°C).
    • Fry the pies in batches, turning occasionally, until they are golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.
  5. Serve:
    • Dust the fried pies with powdered sugar if desired and serve warm.

Enjoy your Fried Pies, a classic and comforting dessert that’s perfect for any occasion!
