Ingredients:

  • 1 cup fresh cilantro leaves (packed, stems removed)
  • 1/2 cup Greek yogurt or sour cream
  • 1/4 cup mayonnaise
  • 2 tablespoons fresh lime juice (about 1 lime)
  • 1 teaspoon lime zest
  • 1 clove garlic, minced
  • 1 teaspoon honey (optional, for a touch of sweetness)
  • 1/4 teaspoon ground cumin
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions:

  1. Prep the Cilantro: Wash and dry the cilantro leaves thoroughly to ensure the dressing has a clean, fresh flavor.
  2. Blend the Ingredients: In a food processor or blender, combine the cilantro, Greek yogurt (or sour cream), mayonnaise, lime juice, lime zest, garlic, honey (if using), and cumin. Blend until smooth.
  3. Add the Olive Oil: While blending, slowly drizzle in the olive oil to create a creamy, emulsified dressing.
  4. Season: Taste the dressing and add salt and pepper as needed.
  5. Chill and Serve: Transfer the dressing to a jar or airtight container and refrigerate for at least 15–30 minutes to let the flavors meld. Serve drizzled over salads, tacos, or as a dip.

Storage:

Store in an airtight container in the refrigerator for up to 1 week. Shake or stir well before using, as some separation may occur.
