Chicken Veronique

Chicken Veronique is a classic French dish that brings together tender chicken breasts and the delicate sweetness of grapes in a luscious white wine cream sauce. This dish is elegant enough for a dinner party yet simple enough to prepare on a weeknight. The grapes add a refreshing burst of flavor, while the velvety sauce, enriched with cream and white wine, ties everything together for a truly luxurious dining experience. Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt and freshly ground black pepper, to taste
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 shallot, finely minced
  • 1 cup dry white wine
  • 1 cup chicken broth
  • ½ cup heavy cream
  • 1 tsp Dijon mustard
  • 1 cup seedless green grapes, halved
  • 1 tbsp fresh parsley, chopped (optional, for garnish)

Instructions:

  1. Prepare the Chicken: Season the chicken breasts with salt and pepper on both sides. Heat olive oil in a large skillet over medium heat. Add the chicken breasts and cook for 5–6 minutes on each side until golden brown and cooked through. Transfer the chicken to a plate and tent with foil to keep warm.
  2. Make the Sauce Base: In the same skillet, melt the butter over medium heat. Add the minced shallot and sauté until softened, about 2 minutes.
  3. Deglaze the Pan: Pour in the white wine and stir, scraping up any browned bits from the bottom of the pan. Let the wine simmer for 2–3 minutes to reduce slightly.
  4. Add Broth and Cream: Stir in the chicken broth and simmer for another 3–4 minutes. Lower the heat and whisk in the heavy cream and Dijon mustard. Continue to cook until the sauce thickens slightly, about 5 minutes.
  5. Add Grapes: Stir in the halved grapes and let them warm through in the sauce for 2 minutes.
  6. Finish the Dish: Return the chicken breasts to the skillet and spoon the sauce over them. Cook for 2 more minutes to meld the flavors.
  7. Serve: Plate the chicken with the sauce spooned generously over the top. Garnish with fresh parsley if desired. Serve immediately.
