Instructions

  1. Prepare the Vegetables:
    • Preheat a grill or grill pan over medium-high heat.
    • In a large bowl, toss the zucchini, bell peppers, and onion with olive oil, smoked paprika, garlic powder, salt, and pepper until evenly coated.
  2. Grill the Vegetables:

  3. Assemble the Quesadillas:

    • Place a second tortilla on top of each to form a quesadilla.
