  • 1 (6 oz) package strawberry gelatin (Jell-O)
  • 2 cups boiling water
  • 1½ cups fresh strawberries, sliced
  • 1 cup cold water

Instructions:

  1. Prepare the crust:
    • In a mixing bowl, combine the graham cracker crumbs, melted butter, and sugar. Mix well until it resembles wet sand.
    • Press the mixture firmly into the bottom of a 9×13-inch pan to form an even layer. Refrigerate while you prepare the filling.
  2. Make the filling:
    • In a large bowl, beat the cream cheese until smooth. Add the powdered sugar and vanilla extract, and mix until fully combined.
    • Gently fold in the whipped topping until smooth and creamy.
    • Spread the filling evenly over the chilled crust. Return to the refrigerator.
  3. Create the strawberry topping:
    • In a medium bowl, dissolve the strawberry gelatin in boiling water. Stir until completely dissolved.
    • Add the cold water and stir to combine. Let the mixture cool slightly (about 10-15 minutes).
    • Arrange the sliced strawberries over the cream cheese layer, then pour the gelatin mixture over the strawberries.
    • Refrigerate for at least 4 hours, or until the gelatin is fully set.
  4. Serve and enjoy:
    • Slice into squares and serve chilled. Garnish with additional whipped topping or fresh strawberries, if desired.
