Ingredients

For the Cake:

  • 1 cup Dr. Pepper (not diet)
  • 1/2 cup unsalted butter
  • 1/4 cup cocoa powder
  • 2 cups granulated sugar
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/2 cup buttermilk
  • 1 teaspoon vanilla extract

  • 1/2 cup unsalted butter
  • 1/4 cup Dr. Pepper
  • 1/4 cup cocoa powder
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract
  • Optional: Chopped pecans for garnish

Instructions

  1. Prepare the Cake:
    • Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan.
    • In a medium saucepan over medium heat, combine Dr. Pepper, butter, and cocoa powder. Stir until the butter melts and the mixture is smooth. Remove from heat and let cool slightly.
    • In a large mixing bowl, whisk together sugar, flour, baking soda, and salt. Gradually pour in the Dr. Pepper mixture, stirring until well combined.
    • In a separate bowl, whisk together eggs, buttermilk, and vanilla extract. Stir this into the cake batter until fully incorporated.
    • Pour the batter into the prepared pan and bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool completely in the pan.
  2. Make the Frosting:
    • In a medium saucepan, combine butter, Dr. Pepper, and cocoa powder over medium heat. Stir until the butter melts and the mixture is smooth. Remove from heat.
    • Gradually whisk in powdered sugar until the frosting is smooth and creamy. Stir in vanilla extract.
    • Pour the warm frosting over the cooled cake, spreading evenly. Garnish with chopped pecans if desired.
  3. Serve:
    • Allow the frosting to set for about 20 minutes before slicing. Serve at room temperature and enjoy!
