Juicy, tender chicken is marinated in a zesty chimichurri sauce made with fresh herbs, garlic, olive oil, and vinegar, then grilled to perfection for a smoky char. The bold flavors of the chimichurri elevate this dish, making it perfect for summer barbecues, casual dinners, or meal prep. Serve it with grilled vegetables, rice, or a fresh salad for a healthy and delicious meal that’s as easy to prepare as it is satisfying.

Ingredients:

For the Chicken:

  • 4 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • 2 tbsp fresh lemon juice
  • 2 tsp salt
  • 1/2 tsp black pepper

For the Chimichurri Sauce:

  • 1 cup fresh parsley, finely chopped
  • 1/2 cup fresh cilantro, finely chopped
  • 4 garlic cloves, minced
  • 1/4 cup red wine vinegar
  • 1/2 cup olive oil
  • 1/2 tsp red pepper flakes (optional)
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions:

  1. Prepare the Chimichurri Sauce: In a small bowl, mix together the parsley, cilantro, garlic, red wine vinegar, olive oil, red pepper flakes (if using), salt, and black pepper. Taste and adjust the seasoning as needed. Reserve half of the sauce for serving, and use the other half for marinating.
  2. Marinate the Chicken: Place the chicken breasts in a large resealable plastic bag or shallow dish. Pour the marinade (half of the chimichurri sauce) over the chicken, ensuring all pieces are coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 4 hours for maximum flavor.
  3. Preheat the Grill: Heat your grill to medium-high heat (around 400°F/200°C). Lightly oil the grates to prevent sticking.
  4. Grill the Chicken: Remove the chicken from the marinade, letting the excess drip off, and place the breasts on the preheated grill. Cook for 6-7 minutes per side, or until the internal temperature reaches 165°F (74°C).
  5. Serve: Transfer the grilled chicken to a serving platter and let it rest for 5 minutes. Drizzle with the reserved chimichurri sauce and serve hot.

Grilled Chimichurri Chicken is a crowd-pleaser that’s bursting with flavor, making it a fantastic option for any occasion. Enjoy the bright, herbaceous goodness with your favorite sides!
