Ingredients:

  • 1 lb beef sirloin or flank steak, thinly sliced
  • 8 oz rice noodles or egg noodles
  • 8 cups beef broth
  • 2 tbsp vegetable oil
  • 4 garlic cloves, minced
  • 1 tbsp ginger, minced
  • 3 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1 tsp sesame oil
  • 1 tbsp hoisin sauce (optional)
  • 1-2 tsp chili paste or Sriracha (optional)
  • 1 cup baby spinach or bok choy
  • 1 cup shredded carrots
  • 1/2 cup sliced mushrooms
  • 2 green onions, thinly sliced
  • Fresh cilantro leaves, for garnish
  • Lime wedges, for serving

Instructions:

  1. Prepare the Noodles: Cook the noodles according to package instructions. Drain and set aside.
  2. Sear the Beef: Heat 1 tablespoon of vegetable oil in a large pot over medium-high heat. Sear the beef slices in batches for 1-2 minutes per side until browned but not fully cooked. Remove and set aside.
  3. Sauté Aromatics: Add the remaining tablespoon of oil to the pot. Sauté the minced garlic and ginger until fragrant, about 1 minute.
  4. Make the Broth: Pour in the beef broth, soy sauce, fish sauce, sesame oil, hoisin sauce (if using), and chili paste (if using). Bring to a simmer and cook for 10 minutes to allow the flavors to meld.
  5. Add Vegetables: Stir in the mushrooms, carrots, and spinach (or bok choy). Simmer for 3-4 minutes until the vegetables are tender.
  6. Finish with Beef and Noodles: Add the seared beef back into the pot along with the cooked noodles. Simmer for an additional 2-3 minutes until the beef is fully cooked and everything is heated through.
  7. Serve: Ladle the soup into bowls, ensuring an even distribution of beef, noodles, and vegetables. Garnish with green onions, cilantro, and a squeeze of fresh lime juice.

This Asian Beef Noodle Soup is hearty, fragrant, and endlessly satisfying, making it a go-to for a warm, nourishing meal!
