  • 6 cups vegetable or chicken broth
  • 1/2 tsp salt (adjust to taste)
  • 1/4 tsp black pepper
  • 1 tbsp red wine vinegar or fresh lemon juice (for finishing)
  • Fresh parsley for garnish (optional)

Instructions:

  1. Prepare the Lentils: Rinse the lentils under cold water, removing any debris. Set aside.
  2. Cook the Vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery, and sauté for 5-7 minutes until softened.
  3. Add Garlic and Spices: Stir in the minced garlic and cook for another 1-2 minutes until fragrant. If using cumin and paprika, add them now and stir to combine.
  4. Add Lentils and Broth: Add the rinsed lentils, bay leaf, thyme, salt, and pepper to the pot. Pour in the vegetable or chicken broth, bring the mixture to a boil, then reduce the heat to a simmer. Cover the pot and cook for 30-40 minutes, or until the lentils are tender but not mushy. Stir occasionally and add more broth or water if needed.
  5. Finish the Soup: Once the lentils are tender, remove the pot from the heat. Discard the bay leaf and thyme sprigs (if using fresh). Stir in the red wine vinegar or lemon juice to brighten the flavor. Taste and adjust the seasoning with more salt and pepper if necessary.
