  • 1 cup (200g) Arborio rice
  • 1/2 cup (120ml) dry white wine
  • 1/4 cup (60g) grated Parmesan cheese, plus extra for serving
  • 2 tbsp unsalted butter
  • Fresh parsley, chopped, for garnish
  • Salt and freshly ground black pepper to taste

Instructions

  1. Rehydrate the Porcini Mushrooms: Place the dried porcini mushrooms in a bowl and cover with 1 cup of warm water. Let them soak for 15-20 minutes until softened. Remove the mushrooms with a slotted spoon and chop them finely. Strain the soaking liquid through a fine sieve or cheesecloth to remove any grit and reserve it.
  2. Heat the Stock: Combine the mushroom soaking liquid with the chicken or vegetable stock in a saucepan. Keep it warm over low heat.
  3. Sauté Aromatics: In a large skillet or saucepan, heat the olive oil over medium heat. Add the chopped onion and garlic, cooking until softened and translucent, about 3-4 minutes.
  4. Toast the Rice: Stir in the Arborio rice and cook for 1-2 minutes, allowing it to absorb the flavors and turn slightly translucent around the edges.
  5. Deglaze with Wine: Pour in the white wine and stir continuously until it is almost fully absorbed.
  6. Cook the Risotto: Begin adding the warm stock to the rice, one ladle at a time, stirring frequently. Allow the liquid to be absorbed before adding the next ladle. Continue this process for about 18-20 minutes, or until the rice is creamy and tender with a slight bite.
  7. Incorporate the Porcini: About halfway through the cooking process, stir in the chopped porcini mushrooms.
  8. Finish with Cheese and Butter: Once the rice is cooked, remove the pan from the heat. Stir in the Parmesan cheese and butter, adjusting the seasoning with salt and pepper to taste.
