Ingredients:
- 2 tbsp vegetable oil or ghee
- 1 medium onion, finely chopped
- 3 cloves garlic, minced

- 2 cups button or cremini mushrooms, sliced
- 1 medium tomato, finely chopped
- 1 tsp ground turmeric
- 1 tsp ground coriander
- 1 tsp ground cumin
- 1 tsp garam masala
- 1/2 tsp red chili powder (adjust to taste)
- 1/2 cup coconut milk or heavy cream
- 1/2 cup water (or as needed)
- Salt to taste
- Fresh cilantro, chopped (for garnish)
Instructions:
- Sauté Aromatics: Heat the oil or ghee in a large pan over medium heat. Add the chopped onion and sauté until golden brown, about 5–7 minutes. Add the garlic, ginger, and green chili, and cook for another minute until fragrant.
