Toffee Almond Sandies

If you’re a fan of buttery, crumbly cookies with a hint of nutty goodness and a touch of toffee sweetness, these Toffee Almond Sandies will be your new favorite treat. Perfect for a cozy tea time, a holiday cookie platter, or a simple afternoon indulgence, these cookies are reminiscent of traditional sandies but with an elevated twist. The crunchy almonds complement the buttery base, while bits of toffee melt into the dough, creating delightful pockets of caramelized flavor. Easy to make yet irresistibly delicious, these cookies are sure to impress both family and friends.

Ingredients:

  • 1 cup (2 sticks) unsalted butter, softened
  • 1/2 cup powdered sugar
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup finely chopped almonds (toasted for extra flavor, if desired)
  • 1/2 cup toffee bits
  • Powdered sugar for rolling (optional)

Instructions:

  1. Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Cream the butter and sugars: In a large mixing bowl, use an electric mixer to beat the butter, powdered sugar, and granulated sugar together until light and fluffy. Add the vanilla extract and mix until combined.
  3. Incorporate dry ingredients: Gradually mix in the flour and salt until just combined. Be careful not to overmix.
  4. Fold in the mix-ins: Gently stir in the chopped almonds and toffee bits with a spatula until evenly distributed.
  5. Shape the cookies: Scoop out about 1 tablespoon of dough and roll it into a ball. Place the dough balls on the prepared baking sheets, spacing them about 2 inches apart. Flatten slightly with the palm of your hand or the bottom of a glass.
  6. Bake: Bake the cookies in the preheated oven for 12-15 minutes or until the edges are just starting to turn golden. Avoid overbaking to maintain the cookies’ tender texture.
  7. Cool and coat: Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack. If desired, roll the warm cookies in powdered sugar for a classic sandies finish.
  8. Store and serve: Store in an airtight container for up to a week. Enjoy with a cup of coffee, tea, or a tall glass of milk!

Tips: For extra almond flavor, add 1/4 teaspoon of almond extract to the dough. You can also swap the almonds for pecans or walnuts to mix things up!
