Ingredients:
- 2 cups (250 g) all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- ½ cup (100 g) granulated sugar
- ¼ cup (50 g) brown sugar
- 2 large eggs
- ½ cup (120 ml) vegetable oil (or melted butter)
- ½ cup (120 ml) milk
- 1 teaspoon vanilla extract
- 1½ cups (200 g) peeled and diced apples (about 2 medium apples)
- ¾ cup (120 g) sultanas (golden raisins)
Instructions:
- Preheat and Prepare: Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease the tin lightly.
- Mix Dry Ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon. Stir in the granulated sugar and brown sugar to evenly distribute the sweetness.
- Combine Wet Ingredients: In another bowl, beat the eggs lightly. Add the vegetable oil, milk, and vanilla extract, whisking until smooth.
- Combine and Add Fruits: Gradually pour the wet ingredients into the dry ingredients, stirring gently until just combined. Fold in the diced apples and sultanas, ensuring they are evenly distributed without overmixing.
- Fill the Muffin Cups: Divide the batter evenly among the prepared muffin cups, filling each about ¾ full.
- Bake: Bake in the preheated oven for 18–22 minutes, or until a toothpick inserted into the center of a muffin comes out clean. The tops should be golden and slightly domed.
- Cool and Enjoy: Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely. Serve warm or at room temperature.
These apple and sultana muffins are best enjoyed fresh but can be stored in an airtight container for up to 3 days or frozen for longer storage. Perfectly sweet, fruity, and spiced, they’re a crowd-pleaser every time!
