Homemade Cereal

Ingredients:

  • 3 cups rolled oats
  • 1 cup nuts (e.g., almonds, walnuts, pecans), chopped
  • ½ cup seeds (e.g., sunflower seeds, pumpkin seeds, chia seeds)
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt
  • â…“ cup honey or maple syrup
  • ¼ cup coconut oil or vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup dried fruit (e.g., raisins, cranberries, chopped apricots)

Instructions:

  1. Preheat the oven to 325°F (165°C). Line a large baking sheet with parchment paper.
  2. In a large bowl, combine the oats, nuts, seeds, cinnamon, and salt. Mix well.
  3. In a small saucepan, gently heat the honey (or maple syrup) and coconut oil until melted. Remove from heat and stir in the vanilla extract.
  4. Pour the warm liquid mixture over the dry ingredients. Stir until the oats and nuts are evenly coated.
  5. Spread the mixture evenly on the prepared baking sheet.
  6. Bake for 20–25 minutes, stirring halfway through, until the cereal is golden and fragrant. Keep a close eye to prevent burning.
  7. Remove from the oven and let cool completely. It will crisp up as it cools.
  8. Stir in the dried fruit. Store in an airtight container for up to 2 weeks.
