The simplicity of fresh ingredients allows each element to shine, making it a go-to recipe for any occasion.

Ingredients

  • 2 cups cherry or grape tomatoes, halved
  • 1 large cucumber, diced or sliced
  • 1/4 red onion, thinly sliced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup Kalamata olives, pitted and sliced (optional)
  • 3 tbsp olive oil
  • 1 tbsp red wine vinegar
  • 1 tsp dried oregano
  • Salt and pepper, to taste
  • Fresh parsley or basil, chopped (optional, for garnish)

Instructions

  1. Prepare the vegetables: In a large mixing bowl, combine the halved tomatoes, diced cucumber, and sliced red onion. If using Kalamata olives, add them to the bowl.
  2. Make the dressing: In a small bowl or jar, whisk together the olive oil, red wine vinegar, dried oregano, and a pinch of salt and pepper. Taste and adjust seasoning as needed.
  3. Assemble the salad: Drizzle the dressing over the vegetables and toss gently to coat evenly. Be careful not to overmix to preserve the texture of the ingredients.
  4. Add the feta: Sprinkle the crumbled feta cheese over the salad and give it a light toss, leaving some chunks of feta visible for presentation.
  5. Serve: Garnish with fresh parsley or basil, if desired. Serve immediately, or chill in the refrigerator for up to 1 hour before serving to allow the flavors to meld.
