Instructions

  1. Prepare the Cookies:
    • Preheat your oven to 325°F (165°C). Line two baking sheets with parchment paper.
    • In a medium bowl, whisk together flour, baking soda, and salt.
    • In a large mixing bowl, combine melted butter, brown sugar, and granulated sugar until smooth. Beat in the egg, egg yolk, and vanilla extract until creamy.
    • Gradually mix the dry ingredients into the wet ingredients. Fold in the chocolate chips.
    • Scoop 1 1/2-tablespoon portions of dough onto the prepared baking sheets, spacing them about 2 inches apart. Flatten slightly with your hand.

    • In a mixing bowl, beat the butter until fluffy. Gradually add powdered sugar and mix until smooth.
    • Add vanilla extract and heavy cream. Beat until the filling is light and spreadable. Adjust the consistency by adding more cream or powdered sugar as needed.
  3. Assemble the Sandwiches:
    • Spread a generous dollop of filling onto the flat side of one cookie. Top with a second cookie, pressing gently to create a sandwich.
    • Repeat with the remaining cookies and filling.
  4. Serve and Store:
    • Serve immediately or refrigerate for a firmer filling. Store in an airtight container in the refrigerator for up to 5 days.
