Apple Pie Pops

Ingredients:

  • 1 package pre-made pie crusts (or homemade)
  • 2 medium apples, peeled, cored, and finely diced
  • 2 tablespoons granulated sugar
  • 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • ½ teaspoon vanilla extract
  • 1 teaspoon cornstarch
  • 1 tablespoon lemon juice
  • 1 egg, beaten (for egg wash)
  • Lollipop sticks or wooden skewers
  • Optional: powdered sugar or caramel sauce for garnish

Instructions:

  1. Preheat the Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Prepare the Filling: In a small bowl, mix the diced apples with granulated sugar, brown sugar, cinnamon, vanilla extract, cornstarch, and lemon juice. Stir until the apples are well coated.
  3. Cut the Dough: Roll out the pie crusts on a lightly floured surface. Use a round or shaped cookie cutter (about 3 inches in diameter) to cut out circles or shapes. You’ll need an even number for the tops and bottoms of the pops.
  4. Assemble the Pops: Place half of the dough shapes on the prepared baking sheet. Spoon a small amount of the apple mixture (about 1-2 teaspoons) into the center of each shape, leaving a border around the edges. Place a lollipop stick or skewer in the center, ensuring it is firmly pressed into the filling. Cover with another dough shape.
  5. Seal and Brush: Press the edges of the dough together with your fingers or a fork to seal the pops. Brush the tops with the beaten egg for a golden finish, and cut small slits or poke holes for steam to escape.
  6. Bake: Bake in the preheated oven for 18-22 minutes, or until the crusts are golden brown and the filling is bubbling. Let the pops cool slightly before handling.
