Mexican Shepherd’s Pie

  • For the mashed potato topping:
    • 4 large potatoes, peeled and cubed
    • 1/4 cup milk
    • 2 tablespoons butter
    • 1/2 cup shredded cheddar or pepper jack cheese
    • 1 jalapeño, finely chopped (optional)
    • 2 tablespoons chopped cilantro
    • Salt and pepper, to taste

Directions:

  1. Prepare the Meat Filling:
    • Heat the olive oil in a large skillet over medium heat. Add the onion and garlic, sautéing until the onion becomes translucent.
    • Add the ground meat, breaking it apart with a spoon. Cook until browned.
    • Stir in chili powder, cumin, paprika, salt, and pepper. Mix well.
    • Add the corn, black beans, diced tomatoes, and broth. Simmer the mixture until everything is heated through and slightly reduced, about 10 minutes. Adjust seasoning as needed.
  2. Make the Mashed Potato Topping:
    • While the meat is cooking, boil the potatoes in salted water until tender, about 15-20 minutes.
