Ingredients:

For the crust:

  • 1 cup (225 g) unsalted butter, softened
  • 2 cups (240 g) all-purpose flour
  • 1/2 cup (100 g) granulated sugar

  • 4 large eggs
  • 1 1/2 cups (300 g) granulated sugar
  • 1/4 cup (30 g) all-purpose flour
  • 2/3 cup (160 ml) lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon pink food coloring (adjust to desired color)
  • Optional: 1/4 cup (60 ml) raspberry puree for natural color and flavor

For garnish:

  • Powdered sugar, for dusting

Directions:

  1. Preheat the oven and prepare the pan:
    • Preheat your oven to 350°F (175°C). Line a 9×13 inch baking dish with parchment paper, allowing some overhang for easy removal.
  2. Make the crust:
    • In a large bowl, cream together the softened butter and 1/2 cup granulated sugar until smooth. Mix in 2 cups flour and salt until the mixture is crumbly. Press the dough into the prepared baking dish, and bake for about 18-20 minutes or until lightly golden. Remove from the oven and let cool slightly.
  3. Prepare the filling:
    • In a medium bowl, whisk together eggs, 1 1/2 cups granulated sugar, and 1/4 cup flour until smooth. Add lemon juice, lemon zest, and pink food coloring (and raspberry puree if using). Mix well until fully combined. Pour the filling over the baked crust.
  4. Bake the bars:
    • Return the pan to the oven and bake for an additional 20-25 minutes, or until the filling is set. Remove from the oven and let cool to room temperature, then chill in the refrigerator for at least 2 hours.
  5. Finish and serve:
    • Lift the bars out of the pan using the overhanging parchment paper. Cut into squares and dust with powdered sugar before serving.
