Instructions:

  3. Add Flavors: Stir in the minced garlic, lemon juice, cumin (if using), and 2 tablespoons of olive oil. Season with salt and pepper to taste. If you prefer a smoother texture, pulse everything in a food processor for a few seconds until well combined.
  4. Chill and Serve: Transfer the eggplant caviar to a serving bowl and refrigerate for at least 30 minutes to allow the flavors to meld together. Before serving, drizzle with a little more olive oil and garnish with fresh chopped parsley or cilantro.
