Ingredients

  • 8 small flour or corn tortillas
  • 1 avocado, sliced
  • 1/2 cup sour cream or Greek yogurt
  • 1/2 cup salsa or pico de gallo
  • 1/2 cup shredded cheese (optional)
  • Fresh cilantro, chopped

Instructions

  1. Prepare the Vegetables:
    • In a large bowl, combine the sliced bell peppers, onion, zucchini, and mushrooms. Drizzle with olive oil and sprinkle with chili powder, cumin, smoked paprika, garlic powder, salt, and pepper. Toss until the vegetables are evenly coated.
  2. Cook the Vegetables:
    • Heat a large skillet or grill pan over medium-high heat. Add the seasoned vegetables and cook, stirring occasionally, for 7-10 minutes, or until they are tender and slightly charred.
  3. Warm the Tortillas:
    • While the vegetables are cooking, warm the tortillas in a dry skillet, in the oven, or in the microwave until pliable.
