Ingredients

  • 2 1/4 tsp (1 packet) active dry yeast
  • 1/4 cup warm water (about 110°F/45°C)
  • 1 cup warm milk (about 110°F/45°C)
  • 3 tbsp honey
  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • 1 1/2 tsp salt
  • 2 cups whole wheat flour
  • 1 to 1 1/2 cups all-purpose flour
  • 2 tbsp melted butter, for brushing

Instructions

  1. Activate the Yeast:
    • In a small bowl, combine the yeast and warm water. Let it sit for 5-10 minutes, until it becomes frothy.
  2. Mix the Wet Ingredients:
    • In a large mixing bowl, combine the warm milk, honey, melted butter, egg, and salt. Stir in the activated yeast mixture.
  3. Add the Flour:
    • Gradually add the whole wheat flour, mixing well after each addition. Slowly add the all-purpose flour, 1/2 cup at a time, until the dough is soft but not sticky.
  4. Knead the Dough:
    • Transfer the dough to a floured surface and knead for 8-10 minutes, or until smooth and elastic. Alternatively, use a stand mixer with a dough hook for 5-6 minutes.
  5. First Rise:
    • Place the dough in a greased bowl, cover with a clean towel or plastic wrap, and let it rise in a warm place for 1-1.5 hours, or until doubled in size.
  6. Shape the Rolls:
    • Punch down the dough and divide it into 12-16 equal pieces. Shape each piece into a smooth ball and place them in a greased 9×13-inch baking dish or on a baking sheet, slightly spaced apart.
  7. Second Rise:
    • Cover the rolls loosely with a towel and let them rise for 30-40 minutes, until puffy.
  8. Bake:
    • Preheat the oven to 375°F (190°C). Bake the rolls for 20-25 minutes, or until golden brown and hollow-sounding when tapped.
  9. Brush and Serve:
    • Brush the warm rolls with melted butter for a shiny, soft finish. Serve warm.
