Ingredients

For the Muffins:

  • 1 3/4 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp ground cinnamon
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream or plain yogurt
  • 1 1/4 cups diced fresh peaches

For the Streusel Topping:

  • 1/2 cup all-purpose flour
  • 1/4 cup brown sugar
  • 1/2 tsp ground cinnamon
  • 1/4 cup cold unsalted butter, cubed

Instructions

  1. Prepare the Streusel Topping:
    • In a small bowl, mix flour, brown sugar, and cinnamon. Add the cubed butter and use a pastry cutter or your fingers to work the butter into the mixture until it resembles coarse crumbs. Set aside.
  2. Preheat Oven and Prepare Muffin Tin:
    • Preheat the oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease it lightly.
  3. Make the Muffin Batter:
    • In a medium bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
    • In a large mixing bowl, beat the butter and sugar together until light and fluffy. Add the eggs one at a time, beating well after each addition. Mix in vanilla and sour cream or yogurt.
    • Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Gently fold in the diced peaches.
  4. Assemble the Muffins:
    • Spoon the batter evenly into the prepared muffin cups, filling each about 3/4 full. Sprinkle the streusel topping generously over the batter.
  5. Bake:
    • Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Allow the muffins to cool in the pan for 5 minutes before transferring to a wire rack.
  6. Serve:
    • Enjoy warm or at room temperature, with a dollop of butter or a drizzle of honey if desired.
