Pork Potstickers

    • 1 teaspoon chili oil or chili flakes (optional)
    • 1/2 teaspoon grated fresh ginger
  • For cooking:
    • 2 tablespoons vegetable oil
    • 1/2 cup water

Directions:

  1. Prepare the filling:
    • In a large bowl, combine the ground pork, chopped cabbage, green onions, ginger, and garlic. Add the soy sauce, sesame oil, sugar, salt, and pepper. Mix well until the ingredients are thoroughly combined.
  2. Assemble the potstickers:
    • Lay a dumpling wrapper in the palm of your hand. Place a small spoonful of the pork mixture in the center of the wrapper. Moisten the edges of the wrapper with water using your finger. Fold the wrapper over the filling to create a half-moon shape, pinching the edges to seal tightly, ensuring there are no air pockets.
  3. Cook the potstickers:
    • Heat vegetable oil in a large skillet over medium heat. Place the potstickers in a single layer in the skillet and fry until the bottoms are golden and crispy, about 2-3 minutes. Carefully add 1/2 cup of water to the skillet, then cover and let steam until the water has evaporated and the potstickers are cooked through, about 6-8 minutes.
  4. Make the dipping sauce:
    • In a small bowl, mix together the soy sauce, rice vinegar, sesame oil, chili oil (if using), and grated ginger.
  5. Serve:
    • Serve the potstickers warm with the dipping sauce on the side.
