Spaghetti Puttanesca

Spaghetti Puttanesca is a bold and flavorful Italian pasta dish that delivers a punch of savory, salty, and tangy goodness in every bite. Originating from Southern Italy, this dish combines briny olives, capers, garlic, and anchovies in a rich tomato sauce, making it a quick and satisfying meal. Perfect for weeknight dinners or when you crave something hearty yet effortless, Spaghetti Puttanesca is a true testament to the beauty of simple, high-quality ingredients.

Ingredients:

  • 12 ounces spaghetti
  • 2 tablespoons olive oil
  • 4 cloves garlic, thinly sliced
  • 4–6 anchovy fillets, finely chopped
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 can (14.5 oz) diced tomatoes
  • 1/3 cup pitted black or Kalamata olives, sliced
  • 2 tablespoons capers, rinsed and drained
  • 1 teaspoon dried oregano
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley or basil, chopped, for garnish
  • Grated Parmesan cheese, for serving (optional)

Instructions:

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Cook the spaghetti according to the package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.
  2. Sauté the Garlic and Anchovies: Heat the olive oil in a large skillet over medium heat. Add the sliced garlic and anchovy fillets, cooking until the garlic is golden and the anchovies melt into the oil, about 2–3 minutes. Stir in the red pepper flakes, if using.
  3. Add the Tomatoes and Seasonings: Pour in the diced tomatoes with their juices, and stir in the olives, capers, and oregano. Simmer for 10–12 minutes, allowing the flavors to meld. Season with salt and pepper to taste.
  4. Combine with Pasta: Add the cooked spaghetti to the skillet, tossing to coat the noodles evenly in the sauce. If the mixture is too thick, add a splash of the reserved pasta water to loosen it.
  5. Serve: Divide the pasta among plates or bowls and garnish with fresh parsley or basil. Top with grated Parmesan cheese, if desired.

Spaghetti Puttanesca is a quick, vibrant dish that’s as satisfying as it is easy to make, offering a perfect balance of robust flavors for pasta lovers everywhere. Buon appetito!
