Ma Po Tofu

Ingredients:

  • 1 block (14 oz) firm tofu, cubed
  • 2 tablespoons vegetable oil
  • 1/2 pound ground pork or ground beef
  • 2 tablespoons doubanjiang (fermented broad bean chili paste)
  • 1 tablespoon fermented black beans, rinsed and chopped
  • 2 cloves garlic, minced
  • 1-inch piece ginger, minced
  • 1 teaspoon Sichuan peppercorns, toasted and ground
  • 1 cup chicken or vegetable broth
  • 1 tablespoon soy sauce
  • 1 teaspoon sugar
  • 1 tablespoon cornstarch mixed with 2 tablespoons water
  • 2 green onions, thinly sliced
  • Steamed rice, for serving

Instructions:

  1. Prepare the Tofu: Gently place the tofu cubes in a pot of boiling salted water and simmer for 2–3 minutes to firm up. Drain and set aside.
  2. Cook the Meat: Heat the vegetable oil in a large skillet or wok over medium heat. Add the ground pork or beef and cook until browned and crumbly, about 3–4 minutes.
  3. Sauté the Aromatics: Add the doubanjiang, fermented black beans, garlic, ginger, and ground Sichuan peppercorns to the pan. Stir-fry for 1–2 minutes until fragrant.
  4. Simmer the Sauce: Pour in the chicken or vegetable broth, soy sauce, and sugar. Stir well and bring the mixture to a simmer.
  5. Add the Tofu: Carefully add the tofu cubes to the skillet, gently stirring to coat them in the sauce. Simmer for 3–4 minutes to allow the flavors to meld.
  6. Thicken the Sauce: Stir in the cornstarch slurry and cook for another minute, or until the sauce thickens to your desired consistency.
  7. Garnish and Serve: Sprinkle the Ma Po Tofu with sliced green onions and serve hot over steamed rice.
