Juicy, tender, and bursting with flavor, these kebabs are a versatile option for family dinners, outdoor barbecues, or special gatherings. Serve them with warm pita, tangy tzatziki, and a fresh salad for a complete and satisfying meal that’s both exotic and comforting.
Ingredients:
- 1 pound ground lamb
- 1 small onion, grated
- 2 cloves garlic, minced
- 2 tablespoons fresh parsley, chopped
- 2 tablespoons fresh mint, chopped (optional)
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper (optional)
- Salt and pepper, to taste
- 1 tablespoon olive oil
- Wooden or metal skewers
Instructions:
- Prepare the Mixture: In a large mixing bowl, combine the ground lamb, grated onion, garlic, parsley, mint (if using), cumin, coriander, cinnamon, smoked paprika, cayenne (if desired), salt, and pepper. Mix well until evenly combined.
- Shape the Kebabs: Divide the mixture into 6–8 portions. Using your hands, shape each portion into a long oval or cylindrical shape around a skewer. If using wooden skewers, soak them in water for 30 minutes beforehand to prevent burning.
- Chill the Kebabs: Place the skewers on a tray and refrigerate for 20–30 minutes. This helps them hold their shape while cooking.
- Cook the Kebabs: Preheat a grill, grill pan, or broiler to medium-high heat. Brush the kebabs lightly with olive oil. Grill for 3–4 minutes per side, turning occasionally, until the lamb is cooked through and slightly charred.
- Serve: Remove the kebabs from the heat and let them rest for a couple of minutes. Serve hot with pita bread, tzatziki sauce, and a side of fresh vegetables or salad.
Lamb Kofta Kebabs are an irresistible combination of bold spices and succulent meat, making them a perfect centerpiece for any meal. Their smoky, spiced aroma is sure to transport you to the bustling streets of the Middle East!
