Ingredients:

  • 1 bone-in, skin-on turkey breast (4-6 lbs)
  • 4 tbsp unsalted butter, softened
  • 3 garlic cloves, minced
  • 1 tbsp fresh rosemary, chopped
  • 1 tbsp fresh thyme, chopped
  • 1 tsp fresh sage, chopped (optional)
  • 1 tsp paprika
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 lemon, halved
  • 1 cup chicken or turkey stock

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C). Place a roasting rack in a roasting pan or on a baking sheet.
  2. Prepare the Herb Butter:
    • In a small bowl, mix the softened butter with garlic, rosemary, thyme, sage (if using), paprika, salt, and pepper until well combined.
  3. Season the Turkey Breast:
    • Pat the turkey breast dry with paper towels. Gently loosen the skin from the meat using your fingers, being careful not to tear it. Spread half of the herb butter under the skin, directly onto the meat. Rub the remaining butter over the skin. Squeeze the juice of one lemon half over the turkey and place the squeezed lemon inside the cavity of the breast (if there is one).
  4. Roast the Turkey:
    • Place the turkey breast on the roasting rack. Pour the chicken or turkey stock into the bottom of the pan to keep the meat moist during roasting. Roast in the preheated oven for 1 ½ to 2 hours, or until the internal temperature reaches 165°F (74°C) in the thickest part of the breast.
  5. Rest the Turkey:
    • Remove the turkey breast from the oven and loosely tent it with aluminum foil. Let it rest for 15-20 minutes to allow the juices to redistribute.
  6. Serve:
    • Slice the turkey breast and serve with your favorite sides. Drizzle pan juices over the meat for added flavor.

This Roasted Turkey Breast with Garlic and Herbs is simple yet packed with flavor, making it a perfect centerpiece for any occasion, from weeknight dinners to festive celebrations. Enjoy its juicy, aromatic goodness!
