CLASSIC MASHED POTATOES

Instructions:

  1. Cook the Potatoes: Place the peeled and chopped potatoes into a large pot. Fill the pot with enough cold water to cover the potatoes by about an inch. Add a generous pinch of salt to the water. Bring to a boil over high heat, then reduce the heat and simmer for 15-20 minutes, or until the potatoes are fork-tender.
  2. Drain and Dry the Potatoes: Once the potatoes are cooked, drain them well in a colander. For extra fluffy potatoes, return the drained potatoes to the pot and let them sit for a minute or two to allow any excess moisture to evaporate.

  4. Add Butter, Milk, and Cream: Gradually add the butter, milk, and cream (if using) to the mashed potatoes, mixing until everything is incorporated and the potatoes are creamy. Add more milk if you prefer a looser consistency.
  5. Season: Taste the mashed potatoes and season with salt and freshly ground black pepper to your liking.
  6. Serve: Transfer the mashed potatoes to a serving dish and top with a pat of butter. Garnish with fresh chopped chives or parsley, if desired.
