Glazed Meatloaf

Ingredients

For the Meatloaf:

  • 1 lb ground beef
  • 1 lb ground pork
  • 1 cup breadcrumbs
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 large eggs, lightly beaten
  • 1/2 cup whole milk
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

For the Glaze:

  • 1/3 cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Dijon mustard

Instructions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C). Line a baking sheet or loaf pan with parchment paper or lightly grease it.
  2. Prepare the Meatloaf Mixture:
    • In a large mixing bowl, combine the ground beef, ground pork, breadcrumbs, onion, garlic, eggs, milk, Worcestershire sauce, Dijon mustard, thyme, paprika, salt, and pepper.
    • Use your hands or a spoon to mix until just combined. Avoid overmixing to ensure a tender meatloaf.
  3. Shape the Meatloaf:
    • Transfer the mixture to the prepared baking sheet or loaf pan.
    • Shape it into a loaf approximately 9×5 inches.
  4. Make the Glaze:
    • In a small bowl, whisk together the ketchup, brown sugar, apple cider vinegar, and Dijon mustard until smooth.
    • Spread half of the glaze evenly over the top of the meatloaf.
  5. Bake the Meatloaf:
    • Place the meatloaf in the oven and bake for 45 minutes.
    • Remove the meatloaf, spread the remaining glaze on top, and return it to the oven.
    • Bake for an additional 15–20 minutes or until the internal temperature reaches 160°F (71°C).
  6. Rest and Serve:
    • Allow the meatloaf to rest for 10 minutes before slicing.
    • Serve with your favorite sides and enjoy!

Tip: For extra flavor, sauté the onions and garlic in a bit of olive oil before adding them to the meat mixture. This enhances their sweetness and reduces any harshness.
