Ingredients:

  • 3 cups cooked chicken, shredded (about 2 chicken breasts)
  • 4 cups fresh spinach, chopped
  • 1 can (10.5 oz) cream of chicken soup
  • 1/2 cup sour cream
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs (optional for topping)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • Salt and pepper, to taste
  • 1 tablespoon olive oil (for sautéing)
  • 1/2 cup milk (or as needed for desired consistency)

Instructions:

  1. Prepare the ingredients:
    • Preheat the oven to 350°F (175°C).
    • Heat olive oil in a large skillet over medium heat. Add the chopped spinach and cook for 2-3 minutes until wilted. Remove from heat and set aside.
    • In a large bowl, combine the shredded chicken, cream of chicken soup, sour cream, mozzarella, Parmesan cheese, garlic powder, onion powder, paprika, and a pinch of salt and pepper. Mix well.
  2. Assemble the casserole:
    • Stir in the cooked spinach into the chicken mixture. If the mixture seems too thick, add milk a little at a time until you reach your desired consistency.
    • Transfer the chicken and spinach mixture into a greased 9×13-inch baking dish and spread it out evenly.
  3. Add the topping:
    • If using, sprinkle breadcrumbs over the top of the casserole for a crunchy topping. Alternatively, you can sprinkle extra cheese for a gooey finish.
  4. Bake the casserole:
    • Place the casserole in the oven and bake for 25-30 minutes, or until the top is golden brown and the casserole is bubbling.
  5. Serve:
    • Let the casserole cool for 5-10 minutes before serving. Enjoy it hot with your favorite sides!

This Chicken and Spinach Casserole is a wholesome, hearty dish that’s sure to become a favorite in your meal rotation!
