MEXICAN PIE

Mexican Pie is a flavorful, easy-to-make dish that combines the best of a casserole and a taco, perfect for busy weeknights or family gatherings. Layers of seasoned ground beef, corn, beans, and cheese are baked together in a savory, golden crust that holds everything together in each hearty bite. Topped with salsa, sour cream, and your favorite taco toppings, this Mexican Pie brings all the delicious flavors of a taco in a comforting, satisfying form. Ingredients:

  • 1 lb ground beef (or ground turkey)
  • 1 medium onion, diced
  • 1 packet taco seasoning (or homemade taco seasoning)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn kernels, drained
  • 1 can (10 oz) diced tomatoes with green chilies (drained)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup sour cream
  • 1/4 cup salsa (plus more for serving)
  • 1 package (8 oz) refrigerated pie crusts (or homemade pie dough)
  • Salt and pepper to taste
  • Optional toppings: diced tomatoes, green onions, cilantro, jalapeños, or sliced avocado

Instructions:

  1. Prepare the Filling: In a large skillet, cook the ground beef (or turkey) over medium heat until browned. Drain any excess fat. Add the diced onion and cook for 2-3 minutes, until softened. Stir in the taco seasoning and cook according to package directions (usually with a little water). Once the mixture has thickened, add the black beans, corn, and diced tomatoes. Stir to combine and cook for an additional 2 minutes. Season with salt and pepper to taste.
  2. Assemble the Pie: Preheat the oven to 375°F (190°C). Roll out one pie crust and fit it into the bottom of a 9-inch pie pan. Press the edges down gently to form the crust. Spoon the beef mixture into the crust, spreading it out evenly. Sprinkle the shredded cheddar and Monterey Jack cheese on top.
  3. Top with the Second Crust: Roll out the second pie crust and lay it over the filled pie, pinching the edges together to seal. You can crimp the edges or make a decorative pattern with a fork. Use a sharp knife to cut a few slits in the top crust to allow steam to escape while baking.
  4. Bake the Pie: Place the pie in the preheated oven and bake for 30-35 minutes, or until the crust is golden brown and the cheese is melted and bubbly.
  5. Serve: Remove the pie from the oven and allow it to cool for 5-10 minutes before slicing. Top with sour cream, salsa, and any other preferred toppings such as diced tomatoes, avocado, or cilantro.
